Cheers to Giedre & to her awesome Vegan Matcha Pancakes!

We are glad to present you a lovely friend of ours: Giedre – or maybe better Naturally Giedre.

This friendship counts years and it was meant to be: sharing the same values for life and having the same interests always made it easy to connect with each other. Recently, we decide to move a step forward and ask Giedre to join our blogging community. She was thrilled to take part in our project and share her amazing vegan matcha recipes with you guys.

Giedre is originally from Lithuania and she has been vegetarian for about 20 years. She is a free spirit and a healthy lifestyle enthusiast. As most of us, she doesn’t like to spend too much time in the kitchen and she believes that food has to be simple to prepare and delicious to taste. She is our favourite Instagrammer and blogger because everything she makes is not only super healthy but also beautiful.

In the coming weeks, we will share some of her most popular recipes on our blog, starting with this delicious vegan matcha pancake.

Vegan Matcha Pancakes

Ingredients:

2 teaspoons organic matcha green tea powder

1/2 cup canned chickpea water (works as an egg substitute)

1 cup flour of your choice

1/2 teaspoon baking powder

1/2 teaspoon vanilla

2 teaspoons coconut oil (optional)


Prepare chickpea egg. In a bowl, whip chickpea water until it turns to egg white consistency. Add matcha powder and whisk together till well combined. Then add soy milk and the dry ingredients, mixing till just combined. Adjust to desired consistency (more soy milk for thinner pancakes). Heat a frying pan and add some coconut oil. Cook for about 2 more minutes, until the bottom is golden brown. Serve with the toppings of your choice.
